Olivia’s Authentic Mediterranean Cuisine in Gettysburg stopped by the Fox43 kitchen today to show us how to make several different dishes, including shrimp quesadillas and fire grilled pork chops.
Today’s first dish is a jumbo shrimp & local mushroom quesadilla.
Recipe:
Stuff tortillas with Monterrey Jack cheese and top with grilled local corn, pepper and pear salsa.
Pear Salsa recipe:
Fire grilled roasted red peppers
Chopped red onion
Fire grilled local corn
Diced euro cucumbers
Lime juice
Cilantro
Chopped pears
Brown sugar
Kosher salt
Fresh chopped garlic
Mix all ingredients in a bowl and serve with the quesadillas.
Fire grilled pork chops recipe:
Fire grill center cut pork loin and top with pear and big Hass avocado chutney
Serve along with oven roasted red potatoes & a steamed veggie blend.
Adrienne also brought along two fun cocktails, a Teagarita and a Pink Turkey.
