Starting March on the right foot with Irish-inspired dishes from Olivia's

Jameson Glazed Lamb Chops served with Ireland-inspired Champ Mash and Buttery Roasted Cabbage Wedge will make diners feel as if they are visiting The Emerald Isle.

YORK, Pa. — As March closes in, Olivia's is tapping into the luck of the Irish early with some dishes perfect to celebrate St. Patrick’s Day.

Jameson Glazed Lamb Chops served with Ireland-inspired Champ Mash and Buttery Roasted Cabbage Wedge will make diners feel as if they are visiting The Emerald Isle itself.

An Irish Mule garnished with Lucky Charms marshmallows is the pot of gold at the end of the meal.

Meal

Jameson Glaze

Ingredients

1/2 cup, apple juice

1 tablespoon, Dijon mustard

1 tablespoon, brown sugar

2 shots (4 ounces), Jameson whiskey 

3 tablespoons, Irish butter

3 tablespoons, honey

Directions

In a pot on medium-high heat, bring the apple juice, mustard, brown sugar, Jameson and honey to a boil. Stir the pot until the mixture thickens, then whisk in the butter.

Champ Mash

Ingredients

1 pound, Yukon potatoes, cooked fork-tender

2 tablespoons, scallions, diced 

2 tablespoons, garlic butter

2 tablespoons, Asiago cheese

3 tablespoons, parsley, chopped

1/2 teaspoon, sea salt

1/2 teaspoon, black pepper

Directions

Boil the potatoes until they are fork-tender, then drain the water. Place the potatoes back into the pot and mash them. Add the diced scallions, Asiago cheese, parsley, salt, pepper, garlic butter and herbs. Smash all of the ingredients together.

Buttery Roasted Cabbage Wedge

Ingredients

1 head of cabbage, cut into 6 wedges 

1/2 pound, Irish butter 

1/2 cup, extra virgin olive oil

1 teaspoon, sea salt

1 teaspoon, black pepper

1/2 teaspoon, thyme

1/2 teaspoon, caraway seed

Directions

Preheat the oven to 375 degrees Fahrenheit. Place the cabbage wedges on a baking pan. Drizzle extra virgin olive oil over the wedges and sprinkle the seasonings on top. Bake them for approximately 10-15 minutes. Remove the pan from the oven and add the butter. Place it back in the oven for an additional 5 - 10 minutes. Remove the cabbage and serve along with the Jameson Glazed Lamb Chops and Champ Mash.

Irish Mule

Ingredients

Jameson Orange

Ginger beer

Fresh orange 

Blood orange, for garnish 

Lucky Charms marshmallows, for garnish 

Directions

Fill a glass with ice. Add the Jameson and fresh orange wedge. Shake the drink, then top it with ginger beer. Garnish the cocktail with the blood orange and marshmallows.
