YORK, Pa. — Olivia's is keeping it fresh, flavorful and healthy for spring with Spring-Style Fire-Grilled Kabobs!

Grilled chicken, tuna and vegetable skewers served over rice pilaf and Fresh Citrus Ginger Sauce makes for a light dish perfect for patio dining as the weather warms.

Meal

Spring-Style Fire-Grilled Kabobs

Ingredients

2 chicken tenderloins, cut in 1-inch cubes

1 filet of tuna, cut in 1-inch cubes

1 cup zucchini, cut in 1-inch cubes

1 cup, bell peppers, assorted colors, cut in 1-inch cubes

1 cup, squash, cut in 1-inch cubes

6 each, cherry tomatoes, whole

6 each, medium mushrooms, cut in 1-inch cubes

3 bamboo skewers, soaked in water for two or more hours (to prevent burning)

Directions

Skewer your veggies; season them with a pinch of sea salt, black pepper and smoked paprika. Grill the skewers on a preheated grill set at medium-high temperature.

Fresh Citrus Ginger Sauce

Ingredients

6 ounces, fresh ginger, peeled and grated

2 ounces, soy sauce 

1 quart, water

1/2 tablespoon, fresh garlic

1 orange, grated and juiced

1 lime, grated and juiced

2 teaspoons, pepper flakes

3 ounces, fire-roasted red peppers

9 ounces, brown sugar

1 tablespoon, cilantro (optional)

46 ounces, pineapple juice

6 ounces, slurry (3 ounces, corn starch mix with 3 ounces, water)

Directions

Put all of the ingredients (except the slurry) into a pot, and bring it to boil. Add the slurry. Mix everything well and bring the pot to a boil once more, then remove it from heat. Grill the skewers and serve them over rice pilaf, all drenched in Fresh Citrus Ginger Sauce. Garnish the dish with sliced avocado.

Ingredients

21 Seeds Valencia Orange Tequila 

Passõa Passion Fruit Liqueur 

Fresh squeezed orange

Fresh squeezed lime

Orange juice

Sweet and sour mix

Prickly pear syrup 

Directions

Fill a glass with ice. Add all of the ingredients and shake it. Pour the drink into a glass rimmed with pink Himalayan sea salt. Garnish the drink with fresh orange.
