Olivia's grills up Jamaican jerk crab cakes w/ island style sweet potatoes

Olivia's restaurant is turning up the heat to get your summer and grilling season started

PENNSYLVANIA, USA — Olivia's is back, tell a friend!

Harry and Yanni Tassou joined us once again from the Olivia's kitchen in Gettysburg to whip up an absolutely delicious meal. 

They made grilled Jamaican Style Jerk Crab Cakes, served along with Island Style Sweet Potatoes topped with Sweet & Spicy Nuts and  Pinã Colada Coleslaw.

Island Style Sweet Potatoes with Sweet & Spicy Nuts

2lbs Yams - washed, peeled, & cut
1 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Jamaican All Spice
1/2 tsp granulated garlic
3 tbsp Brown Sugar - dark
2 oz Dark Rum
1/2 lb walnuts - crushed
Fry the Sweet Potatoes, making sweet potato fries.
In a sauté pan on Medium heat, toss in walnuts and cook for approximately 3 minutes.  Add seasonings and spices.  Toast for 1 minute.  

Carefully add the rum, which will be flammable, and sugar.  

Cook until sugar has dissolved, will take approximately 2 minutes.
